Autumn Comfort in a Bowl — Our Favourite Seasonal Soup

There’s something about this time of year that makes a bowl of soup feel like the ultimate comfort food. 🍁

When the air turns crisp and markets fill up with pumpkins, carrots, and squash, the kitchen almost calls you to slow down, roast something, and stir up something warm.

At Colline’s Kitchen, autumn is one of our favourite seasons to cook for. We love using local, seasonal ingredients that celebrate everything good about this time of year — rich flavours, deep colours, and that feeling of home.

Here’s a simple soup recipe we make often (and it always disappears fast):

Roasted Pumpkin & Carrot Soup 🍂

You’ll need:

  • 1 small pumpkin (or butternut squash), peeled and cubed

  • 3 carrots, chopped

  • 1 onion, roughly chopped

  • 2 cloves garlic, peeled

  • 1 tbsp olive oil

  • 500ml vegetable stock

  • A pinch of nutmeg (optional)

  • Salt and pepper to taste

  • A swirl of cream or coconut milk to finish

How to make it:

1️⃣ Toss the pumpkin, carrots, onion, and garlic in olive oil, salt and pepper. Roast at 200°C for around 25–30 minutes until soft and caramelised.

2️⃣ Transfer to a saucepan, add vegetable stock, and simmer for 10 minutes.

3️⃣ Blend until smooth, then adjust seasoning and finish with a swirl of cream or coconut milk.

Serve it with..

A slice of sourdough, a sprinkle of seeds, or even a bit of chilli oil for a kick.
